Gluten Free Faves

Let me start by saying, I don't have celiac disease. I know there are people who do, and I know it's a very, very serious thing. I don't take that lightly. After an elimination diet and plenty of work with my doctor and dietician, we've figured out that while I don't have celiac, I do have "non celiac gluten sensitivity." So, what does that even mean? Well, it means that I try to avoid gluten as much as possible, but I don't have to worry about irreversible damage to my body if I do happen to ingest some. I also found out through a DNA test that I have the genetic marker that makes me more susceptible to inflammation and inflammatory triggers. Since gluten can be inflammatory, it's helpful to just be gluten free. All of this has lead me on a journey because let's be honest - not eating gluten isn't the same the not eating carbs. I'll spare you the soapbox about the fact that "CARB" isn't a bad word, and instead skip to the point of this blog: sharing my favorite gluten free items.
Oats
GF Harvest Pure Oats Gluten Free Rolled Oats is one of the first GF products I tried. Yes, I know that oats are naturally gluten free, but when oats are GF it means they've been grown and processed where there's no risk of cross contamination. I'm also a huge fan of True North's GF Oats (they have granola too)! Both are small businesses and have great products at good prices.
Flour (because baking)
As a baker, finding a good GF flour is a big deal. I've found that King Arthur is my favorite. It's easy to find, comes in decent sized packages, and works well as a cup for cup substitute.
Pizza Crust
Bob's Red Mill for the win! Seriously, this pizza crust is great. I usually will make it, divide it into five parts. Use one and put the other four in plastic bags. I can then freeze them and have frozen, ready to go GF pizza crust whenever it's pizza night!
Cookies
Okay, had to throw this in here, but Oreo now makes GF cookies. Seriously, they're great. Get yourself some.
Pasta
I'm a big fan of pasta that also has some additional protein in there and when it comes to GF, my fave is Banza chickpea pasta. I cook mine for a few more minutes than they suggest on the box, but that's just my personal preference.
I'm still deciding what my favorite waffle or pancake mix is, but as soon as I figure it out, I'll be sure to let you know - but also, I'm taking suggestions.
