Apple Cider Cupcakes


It’s fall; the best time of year. Bring out your boots, your flannel, vests, and sweaters because the best time of year is here. Now, I’ll go ahead and confess, I’m not a fan of Pumpkin Spice. I am, however, a huge fan of Apple Cider. I love a nice warm mug of it on those cool fall evenings. Other things I love: cupcakes. So I started thinking...what if I could have both? What if I could in fact have my Apple Cider and eat it too?

So, I set off to come up with an Apple Cider cupcake, and now, I get to share it with you! A few things to keep in mind: this was not made a high elevation; I used paper liners; I bake with a gas stove, but it is NOT a convection oven - just a regular one.

Okay, now for the good stuff!

Recipe: Apple Cider Cupcake

Yield: 12 Cupcakes & Frosting for 12 Cupcakes

Cupcake Ingredients

  • 1 1/4 c cake flour

  • 1 cup sugar

  • 1 1/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 c butter

  • 2 eggs

  • 1/2 c Apple Cider

  • 1 teaspoon vanilla

  • 1 1/2 teaspoon cinnamon (you can add more or less depending on your personal preference and how much is in the Cider you use)

Instructions

  1. Preheat the oven to 350; line cupcake pan with liners

  2. Cut butter into small squares

  3. Mix flour, sugar, baking powder, and salt

  4. Add the butter cubes then cut butter into the dry ingredients using a pastry cutter or your fingers

  5. In a separate bowl, mix eggs, Cider, and vanilla

  6. Add wet ingredients to dry and mix with hand mixer (or stand mixer). Mix just until everything is combine - careful to not overmix

  7. Finally, stir in cinnamon to the batter

  8. Divide the batter between 12 cupcakes, bake for 18-20 minutes until a toothpick inserted comes out clean.

  9. When cupcakes are finished baking, remove from the oven, and aloe to cool fully before frosting

Frosting Ingredients

  • 2 1/2 cups powdered sugar

  • 1 stick butter, softened

  • Cinnimon

  • 5 tablespoons Apple Cider

Frosting Instructions

  1. Cream butter with a stand or hand mixer

  2. Slowly add powder sugar and apple cider while mixing (alternating 1/2 c powdered sugar and 1 tablespoon apple cider)

  3. Increase speed of mixing to fully bring together ingredients

  4. Add cinnamon - starting with 1/2 tablespoon and adding to taste.

  5. Fill piping bag with frosting and swirl onto cupcakes

For the topping, mix 1/4 cup powdered sugar and 1 teaspoon cinnamon in a small bowl. Pour mixture into a sifter and shake over freshly frosted cupcakes and enjoy!

Store in an airtight container.
